Zucchini Bread
This is very similar to carrot cake in flavour. I love it straight from the oven spread with lots of slightly salted butter. Its a perfect nut free option for lunch boxes.
Makes 2 loaves
Pre-heat oven to 150 / grease 2 loaf tins
3 cups of plain or whole meal flour sifted
1/2t salt, 1t BiCarb, 1/2t baking powder
1t cinnamon, 1/2 a freshly grated nutmeg (1/4t ground)
2 cups white sugar, 1/2 cup raw sugar
1/2 cup Honey
3 eggs beaten lightly
200ml Rice Bran Oil
2t Vanilla Essence
2 medium zucchini grated
1/4cup oats, 1T raw sugar, 1/2t cinnamon
Sift the flour with the salt, bicarb, baking powder, cinnamon + nutmeg. Add the sugars.
Mix the oil, honey, vanilla + beaten eggs. Add to dry ingredients along with the grated zucchini. Mix well and pour into the two tins.
Mix together oats with the remaining sugar and cinnamon, sprinkle on top. Bake for 1hr. Eat fresh with ricotta, mint + drizzled honey, hot from the oven with butter or slice and freeze for lunch boxes.
